After getting some things done around the homestead that needed to be done, I'm off on vacation to the lands of my ancestors, and home to my favorite beers. Barkley will be in good hands with a coworker who has dogs and doesn't mind more and a neighbor is tending the Range. Though I'll miss him, I am really looking forward to this, my first time out of the country in years where I didn't have to work (and trust me, I got out of secret squirrel headquarters with a "Gee, sorry, approved vacation, out of country, no computer no phone, BYE! JUST in time)If you are a new reader, have some fun with the old posts. Though I may not be where I can respond to comments, or even post them, I will VERY much enjoy them on my return. For my regulars, I'll have some short posts coming up, that I wrote before I left, and if I can find a hotel computer, I'll send a photo and note or two from the Land of the Celts.

Cowboy Turkey Burgers
1 and 1/4 lbs ground turkey
1 egg
1/2 cup bread crumbs
1 teaspoon Penzey's Chili 9000.
1/2 teaspoon oregano
1/2 teaspoon ground cumin
dash Penzey's garlic powder
1 teaspoon salt
1/2 teaspoon cracked black pepper
1 to 2 tablespoons oil
1/4 pound smoked cheddar
8 Alexia onion rings (frozen at the grocers, their rings and seasoned large fries are EXCELLENT)
1/2 cup of your favorite barbecue sauce
lettuce
4 buns
Combine turkey, egg, bread crumbs (I used the super fine Japanese ones), and seasonings together in a bowl; mix well. Form mixture into 4 patties. Fry in cast iron skillet on medium while onion rings bake as directed (about 4-5 minutes per side of patty). Assemble and top each burger with a slice or two of cheese and a couple of tablespoons of your favorite barbecue sauce and two onion rings.
Leftover patties freeze well or the meat can be frozen uncooked in a small container.

Michael - thank you. Glad you are recovering from your surgery. I hae not forgotten the black powder adventure. Just waiting for some warmer weather.
Trust me folks, there will be several Guinness tipped. In fact, it's best to stock up now, in case there's a sudden U.S. Import shortage.

Travel safe, Mysti and I are hoping to make a trip to the land of her Ancestors (Ireland) and then a quick hop over to Scotland next year....providing the entire USA doesn't tank this year.
