Venison Lasagna

Venison is actually quite healthy, naturally lean. Lasagna however is another story, often full of a lot of full fat cheese, hamburger and often sausage as well. With summer coming up, we're all watching our "deer gut" and I made a healthier version of the old classic. Spice replaces some of the extra flavoring from sausage and the cheeses were selected for being lower in fat.

Venison Lasagna. Served with some fresh herbed biscuits and steamed green beans, even Larry the Bear would have enjoyed this.

and when you use whole grain pasta it's like health food...

Recalling one of Mom's failed experiments, I was horrified to see cottage cheese in the recipe but she didn't break up the cottage cheese to make a smooth mixture.

This looks really good and Dori's suggestion would actually add a little flavor of it's own. I've been using whole grain pasta exclusively for years. Regular pasta is just bland in comparison to my taste.

Well, lasagna for me is really versatile. Like in your case, you're able to make a healthier version of lasagna recipe. I like the idea of using venison and cottage cheese, sounds like the healthier choice, lol! Whole grain pasta is two thumbs up for me, too! I make veggie lasagna for my twins alternately with their favorite 3-cheese lasagna recipe. At least we compromise by having veggies and cheese on it, lol!
