This morning started with Blueberry Oatmeal Muffins. After Cirque du Bacon yesterday, I wanted to make something low fat (well they were until I added cinnamon butter) and whole grain. I am not going to give up either my bacon or my Jamesons, but blog friend Maura has got me thinking about using the best quality natural ingredients in my cooking and she has some wonderful recipes for the nutrition and taste minded. After breakfast, I started looking through her blog archives and there they were. Little nuggets of pasta goodness.
Our friend North had already made them for his wife and son, they looked so good it just called for a Range adaption! Mine had extra mushrooms, a splash of wine and wild honey in the sauce, some dried peppers and some summer savory and a couple of other herbs. I rarely measure anything unless I'm making bread or pastry but I try and give you an accurate measurement in the recipe so you can recreate at home.
Lasagna Bites - Range Style.
They're little individual lasagnas made using the freshest of ingredients, baked in a muffin cup, using Wonton wrappers instead of noodles (not to be confused with wanton wrappers which you can buy at Victoria's Secret).
You press a wonton wrapper into the muffin tin and fill it with meat sauce made with ground turkey and spices and top with ricotta with a hint of cracked pepper and basil
Sprinkle on a blend of five cheeses. Then, gently press another wonton wrapper on top of the ricotta layer, pressing down into the sides of the tin to form a shallow bowl shape.
They're good for you, but don't eat too many, lest your pants get too tight.

They freeze well. Reheat in the microwave.
The basic process is there, and as you so aptly demonstrate you can make variations-on-a-theme to delight your own taste buds.

I'm so glad you found these little lasagna bites and liked them - they are definitely a different take on same old same old lasagna...fun and easy to do. Clean Eating is taking fresh, natural, un-messed around with ingredients and preparing simple, tasty food. These little lasagna bites are a great recipe. Love your addition of honey to the sauce, too.

good eatin' I keep a muffin pan handy for all sorts of items. The microwave safe one is relegated to being a mold for home made soap! The cast iron one is a mold for lead and aluminum ingots. the sheet metal ones do make a nice mold for the larger Scooby snacks. I will definitely try these out!
That's why I love canning, I KNOW what's going into my food. Funny thing is, my mid section has expanded a bit lately.... I LOVE PASTA. I need to go on a pasta break and bread break and..... Oh forget about it! Now I need to try those Lasagna Bites, yuuuummy & summer savory is one of my fave spices.

Chris - he is doing fine, hating the cone but it will come off this week if the doc agrees. Eating and everything normal.I've spent as much time as I could with him, giving him plenty of attention.
I need to drop 40 or so, so I'll save my drooling for the K31.
