Playing Chicken

You're having WHAT for dinner?

The bat phone didn't go off all weekend, but dinner was still something quick and easy - just in case.

I've made this before but not for Partner in Grime and he raved about it.  Not only is it tasty, it's super easy.
Poppyseed Crunch Chicken

You will need
Panko bread crumbs (the thicker cut Japanese ones).  Either Italian seasoned or add 1 tsp of seasoning to plain.  You don't need the whole box.
4-6 chicken pieces (I used large bone in thighs but use your favorite dismantled chicken parts)
1 egg
about a cup or so of Poppyseed Salad dressing.

Whisk the egg with a splash of water in a large cereal bowl. Dunk chicken in egg to coat, then roll in the bread crumbs.

Bake in preheated 400 F oven for 25 minutes  Open door, and pour salad dressing over the chicken pieces.  Don't drown them, just enough to lightly coat the top surface without spilling a bunch on the hot cookie sheet they're on.

Bake another 20-25 minutes, until top is browned and internal temperature is 165 F. (25 minutes will thoroughly cook about any size piece, but you'll want to cook it for about 20 minutes for small pieces).

The meat stays incredibly juicy and the coating is crisp but not crunchy/hard, with a nice little sweet and sour flavor to it.  Reheat wrapped in foil for 20 minutes at 350 F. and it's just as good the next day

Quick, easy, and it hit the spot.  What more can you ask for.
