The Sourdough was running amock with the warmer temperatures in the house so I had to use up some of it. Sourdough pancakes made with just starter. These turned out pretty tasty.
2 cups Sourdough Starter, fed
2 eggs
1/4 cup oil or butter
2 tablespoons honey
1/2 teaspoon salt or salt substitute
1 teaspoon baking soda
1 teaspoon baking powder (if using sodium-free baking powder as I did, increase to 2 teaspoons)
extra oil or butter for greasing a skillet
Mix the starter, eggs, oil, honey, and salt in a glass bowl. Add the baking soda last, and watch the starter foam up. If it is too thin of a batter (depends on your starter) add a Tablespoon of flour at a time until the desired consistency - should look like cake batter.
Preheat a Tablespoon of butter or oil in a skillet. After it is hot enough to produce a sizzle, pour on a small ladleful of batter. At this point, turn the stove down a bit so that the pancake has a chance to cook through without the bottom burning.
Remember the “flip only one-time” rule.
When the top is nice and bubbly, flip and cook for 30 seconds on the other side.
I would sit down at your table for that fine looking breakfast. But would only ask for a half stack. That is one large amount of food for one sitting.

Major Michael Davis O’Donnell

New Year’s Day 1970
On March 24, 1970, he was the aircraft commander aboard a UH-1H Iroquois on a mission to extract a long-range reconnaissance patrol in Ratanakiri Province, Cambodia. The aircraft picked up the recon team and was beginning its ascent when it suffered an explosion that caused it to crash. Major O’Donnell was killed in the incident. Heavy enemy presence in the area prevented ground investigations of the UH-1H’s crash site at the time. In April 1995, a U.S. search team recovered remains associated with the loss of MAJ O’Donnell’s helicopter. In 2001, advances in forensic techniques allowed for some of the recovered remains to be identified as those of MAJ O’Donnell.
