Corn and Bacon Waffles.
Start with what I refer to as "homemade Jiffy Mix". Jiffy is cheap and it's good but this is cheaper and has no hydrogenated ingredients you don't need.
2/3 cup flour
1/2 cup cornmeal
2 and 1/2 Tablespoons sugar
1 Tablespoon baking powder
1/4 teaspoon salt
To make waffles - to the mix, add a small dollop of honey, 2 tablespoons of melted lard, a large egg, 3/4 cup milk, 6-8 pieces of chopped bacon, a handful of corn (fresh off a cob or frozen and thawed) and a drop of Mexican vanilla.
Cook in your waffle iron as directed. Top with syrup, molasses or topping of your choice. Leftover squares of waffles can be cooled, wrapped up and frozen, to be reheated in the toaster on work days. You'll never Eggo again.
