But what DO you make when you have an unexpected guest or two and everyone is ready for a little snack?

Prarie Bacon (Pig Candy!)
1 pound sliced applewood smoked bacon
3 heaping tablespoons brown sugar
1 1/2 teaspoons Penzey's Chili 9000 chili powder (or your favorite chili powder but add a pinch of ancho chili powder to it for some smokiness)
1/4 cup finely chopped pecans

Preheat oven to 425. Line two 13 x 9 metal pans or a large jelly roll pan with foil. Arrange the bacon in a single layer on the foil. Bake for 10 minutes; drain.

Combine the brown sugar and chili powder; sprinkle over bacon. Sprinkle with pecans. Bake 5-10 minutes longer or until bacon is crisp. Drain on paper towels.

I tried for a picture when I made this for friends, but there was just an empty plate and a couple tiny pecan crumbs. (Think pirahna and skelatinized pig).


  1. Here is a helpful tip having to do with a similar thing I make. Mine is brown sugar + onion powder + a pinch of cayenne. Variations in recipe are great.

    The tip, though, it to use metal cookie cooling trays on a foil-lined cookie sheet in the oven. The trays elevate the bacon strips. The bacon does not set in a pool of grease - it all drips away.

    Candy pork strips. Heavenly.

  4. Heck yeah! This is my all time favorite snack. I've never made it with chopped pecans but that sounds like an interesting twist.

  6. I went to Cash 'n' Carry and bought a quarter sheet pan with cooling rack to fit. Perfect.
